The Chickpea is a legume we cultivate in rotation according to our Good Agricultural Practices. It naturally enriches the soil with nitrogen, an essential nutrient. Renowned as a “soil-enhancing” crop, it improves the fertility of the land, which will then host Mancini Estate Pasta’s durum wheat the following year.
Precious to the earth, ideal for a diet rich in fiber and protein.

Information about chickpeas:
- The average diameter is 7.8–8.2 mm.
- The recommended soaking time is 12 hours.
- The cooking time is 2 hours.
Preparation and cooking instructions: soak the product in water for about 12 hours, check and remove any foreign objects. Rinse thoroughly and cook in water for about 2 hours from boiling. Consume after visual inspection.
